Azuki to Kouri brings together two Japanese traditions – azuki red bean paste, which has been prized since ancient times, and kakigori shaved ice, a beloved summertime treat.

Focusing on the contrast of textures and temperatures, along with beautiful presentation, we use a variety of French techniques to elevate kakigori from a sugary standby to a confection of extraordinary flavor.

MESSAGE

Our aim was to make kakigori that could only be created by a pâtissier. The aroma, flavor, and texture of the layered dessert will surprise you.
